Holly's Taco Salad!

Yumness.
--1 lb.(-ish) ground beef
--i pack of taco mix
--iceberg lettuce
--1 15 oz. can of Ro-Tel (diced tomatoes/chilis), regular or mild, your preference
--1 15 oz. can of sweet yellow corn
--1 15 oz. can of black beans
--taco sauce
--Mexican cheese (or whatever cheese you choose)
--tortilla shell bowls for taco salad, or tortilla chips (your preference)
--1 or 2 avocados
--sour cream (optional)
1. Brown ground beef and drain fat. Let fat cool down and drizzle over your dog's dry dog food, so he stays out of your way while you make the rest of this. ;)
2. Prepare browned ground beef with taco mix according to directions on the packet. (I prefer Lawry's.) Let cool down some.
3. Open cans of Ro-Tel, corn and black beans. Drain. Add to taco meat. Mix thoroughly.
4. Chop up some iceberg lettuce. (Go with iceberg. I know, it has little nutritional value for lettuce, but it's crisp and cool and goes better with taco salad. Believe me.)
5. Now you have the option of using those cool tortilla shell bowls for this, or you can just put this stuff on top of some tortilla chips. The tortilla bowls take a little time to prepare (unless you can get them pre-made), but it may be easier to eat with the chips. It's up to you. Anyway, layer some of the lettuce in your bowl/on your chips. Then scoop a few tablespoonfuls of the taco meat mixture on top.
6. Add taco sauce to taste.
7. Cut open an avocado in half and scoop half of the fleshy part out of the skin. Chop up coarsely and put on top of your taco meat/sauce.
8. Shred some cheese (or buy it pre-shredded, like I do because I'm lazy and hate to clean the shredder) and put on top.
9. Add some sour cream on top.
10. DEVOUR. Say "¡Qué sabrosa!"
